Easy Cedar Planked Salmon
1 Salmon filet or 4 steaks
1/4 cup olive oil
1/4 cup brown sugar
salt and pepper to taste

Soak your cedar plank at least one hour, making sure it is completely submerged. Pat salmon dry, rub salmon with olive oil. Sprinkle with salt, pepper and 2/3 brown sugar. Spread remaining 1/3 of the brown sugar directly on the cedar grilling plank. Place salmon skin down on the the grilling plank. Pre-heat your grill to med-high heat. Place plank directly onto the grill over coal or gas flame. Close lid and cook on med-high for 10-15 minutes. Enjoy!

Cedar Prawns and Portobellos
15-20 large prawns
3 large Portobella mushrooms
1 tsp finely chopped garlic
1/4 cup white wine vinegar
salt & pepper
1 large lemon
1/4 cup olive oil

In a small bowl combine the juice of the lemon with the olive oil and vinegar. Add garlic, salt and pepper to taste. Add a pinch of lemon zest for a more intense flavor. Marinate prawns for at least 1 hour. Soak cedar plank for one hour, making sure it is completely submerged. Pre-heat grill to med-high heat. Place prawns directly on plank and place on grill. Drizzle oil or marinade onto the mushrooms and place on plank next to the prawns. Close lid and cook on med-high heat for 10-15 minutes.
